The present invention relates to a Bacillus subtilis strain having high productivity of vitamin K2 and a method for producing fast-fermented bean paste using the same. The Bacillus subtilis strain has high vitamin K2 synthesis ability in comparison with a conventional known strain, fast-fermented bean paste produced by optimal conditions of the present invention using the strain contains a large amount of vitamin K2 in comparison with a conventional fermented food, thereby a food for preventing and alleviating osteoporosis can be helpfully used.본 발명은 비타민 K2 합성능이 우수한 바실러스 서브틸리스 (Bacillus subtilis) 균주 및 이를 이용한 청국장의 제조방법에 관한 것이다. 본 발명에 따른 바실러스 서브틸리스 균주는 비타민 K2합성능이 기존의 공지된 균주보다 높으며, 이 균주를 이용하여 본 발명의 최적화된 발효 조건으로 제조된 청국장은 기존의 발효식품에 비해보다 많은 양의 K2비타민을 함유하고 있어 골다공증 예방 및 개선용 식품으로 유용하게 사용될 수 있다
