PURPOSE: A producing method of sausage with improved palatability and storage property, and the sausage produced therefrom are provided to use bamboo shoots and bamboo leaves for producing the sausage. CONSTITUTION: A producing method of sausage comprises the following steps: adding additives for producing the sausage into crushed material meat, and mixing; adding bamboo shoot powder or finely cut bamboo shoots into the mixture; and filling the mixture into a sausage casing. The additives are selected from salt, vegetables, garlic, pepper, onion, ginger, allium odorum, black pepper powder, whole milk powder, and corn powder. The material meat is pork, beef, lamb, poultry meat, fish, or their mixture.본 발명은 죽순·죽엽을 이용함으로서 기호성과 저장성이 향상된 소세지의 제조 방법과 그 방법에 따라 얻어진 소세지의 제조 방법을 개시한다. 본 발명의 소세지는 죽순·죽엽이 가지는 기능성도 아울러 가질 수 있다.
