PROBLEM TO BE SOLVED: To provide an improved thermally inhibited flour and a method of producing the same.SOLUTION: A thermally inhibited grain flour has at least 50% less hexanal after zero days or 4 weeks of storage than a flour thermally inhibited after milling.
