The present invention provides a method of manufacturing rice aged in bamboo, including beneficial components of chaga mushroom. The method includes: a step (a) of mixing unpolished rice seeds and chaga mushroom in a container at a weight ratio of 20:1； a step (b) of pouring purified water into the container of the step (a) having the rice seeds to be soaked in the water and leaving the container alone for 12 hours at 40°；C； a step (c) of removing internal joints of a bamboo container, of which length is 1-2 m and washing the bamboo container for sanitization； a step (d) of filling the bamboo container of the step (c) with the unpolished rice seeds, which have gone through the step (b), sealing both ends of the bamboo container and aging the container in an aging chamber or incubator at a temperature of 25-45°；C and a humidity of 60% for six months； and a step (e) of drying and polishing the unpolished rice seeds which have been aged through the step (d). Thus, the present invention is capable of enabling users to consistently and conveniently take beneficial components of chaga mushroom and making a contribution to promoting the consumption of rice.COPYRIGHT KIPO 2018본 발명은 도정하지 않은 볍씨와 차가버섯의 중량비가 20:1이 되도록 용기에 넣고 혼합하는 단계 (가), 상기 (가)단계의 용기에 정제수를 도정하지 않은 볍씨가 잠길 만큼 부어 침지시켜 40℃에서 12시간 방치시키는 단계 (나), 1~2 m 로 자른 대나무통의 내부 마디를 제거한 후, 세척하여 살균하는 단계 (다), 상기 (나)단계를 거친 도정하지 않은 볍씨을 건져 상기 (다)단계에서 준비한 대나무통에 채워넣고 대나무통의 양단을 밀봉한 후 25~45℃에서 습도 60%를 유지하는 숙성실 또는 인큐베이터에서 6개월간 숙성시키는 단계 (라) 및 상기 (라)단계에서 숙성된 도정하지 않은 볍씨을 건조한 후 도정하는 단계 (마)로 이루어지는 것을 특징으로 하는 차가버섯의 유용성분을 포함하는 대나무통 숙성쌀의 제조방법을 제공함으로써 차가버섯의 유용성분을 용이한 형태로 꾸준히 섭취할 수 있고 쌀의 소비 촉진에도 도움이 될 수 있다.
