PURPOSE: A producing method of salted cabbage using natural ingredients is provided to improve the storage property of the salted cabbage, and to remove the unique bad smell from the salted cabbage.CONSTITUTION: A producing method of salted cabbage using natural ingredients comprises the following steps: drying phellinus yucatensis, molokia, ginger, and rice straws, and crushing each ingredient into 20-100 micrometers mixing the dried phellinus yucatensis, molokia, ginger, and rice straws in a weight ratio of 40-60:40-60:10-30:10-20% mixing the mixture with purified water in a volume ratio of 50:50 fermenting the mixture at 25-40 deg C for 3-15 days mixing the fermented mixture with the purified water, and extracting at 75-90 deg C for 1-3 hours before filtering and cooling at 10-15 deg C mixing the fermented extract of the ingredients and the purified water, and adding salt into the mixture inserting fresh cabbage into the obtained salt water, and salting the cabbage for 5-10 hours and washing the salted cabbage, and spraying the fermented extract before aging the cabbage for 1-2 hours.COPYRIGHT KIPO 2012
