PURPOSE: A production method of low salinity dried anchovy is provided to reduce the salinity of the dried anchovy, to remove the oxidative odor and decomposition odor, and to improve the storage property of the anchovy.CONSTITUTION: Phellinus linteus, molokhia, ginger, and rice straws are dried into the water content within 5%, and are crushed into 5-10 um. The crushed Phellinus linteus, molokhia, ginger, and rice straws are mixed in a volume ratio of 20-60:10-50:3-10:5-20. The mixed powder is mixed with purified water in a volume ratio of 30-50:50-200. The mixture is fermented at 25-40°C for 3-15 days. The fermented material and purified water are mixed in a weight ratio of 1:2, and the material is extracted for 1-3 hours at a high temperature of 80-100°C. The extract is filtered and mixed with purified water in a weight ratio of 1:5-10. The cooled extract is mixed with salt to adjust the salinity to 3-5%. Steamed anchovy is dried at 35-60°C for 6-8 hours using hot air until the water content is reduced to 20-40%.
