PROBLEM TO BE SOLVED: To provide a production method of retort noodles having a smooth surface and excellent texture.SOLUTION: A raw noodle is produced from noodle-making raw materials including 25 to 35 mass% wheat gluten (in terms of dry matter), 45 to 65 mass% acetylated or etherified tapioca starch, and 0 to 20 mass% wheat flour. The production method of retort noodles includes drying the produced raw noodle to form into a dry noodle, then seal-packaging the dry noodle together with a seasoning liquid, and subsequently performing retort treatment.
