The present invention relates to a manufacturing method of high quality red bellflower roots which comprises a first steaming step of steaming bellflower roots at 60 to 120C for 2 to 24 hours in the relative humidity of 90 to 110%, and a first drying step of inserting the firstly steamed bellflower roots into a dryer, and drying the bellflower roots at 30 to 100C for 6 to 72 hours； and to red bellflower roots manufactured by the method. According to the present invention, red bellflower roots with improved flavor and functionality and the increased contents of crude saponin can be produced.도라지를 증숙기로 60 내지 120℃, 상대 습도 90 내지 110%에서 2 내지 24시간 동안 증숙하는 1 차 증숙 단계； 및 상기 1차 증숙된 도라지를 건조기에 넣고 30 내지 100℃에서 6 내지 72시간건조하는 1차 건조 단계를 포함하는 홍도라지를 제조하는 방법 및 상기 제조 방법에 따라 제조된 홍도라지에 관한 것이다.
