CONSTITUTION: A producing method of soup powder containing eel as a main ingredient comprises the following steps: dressing fresh ell with a knife, and removing blood by soaking in water; mixing the water, the dressed eel, spring onion, garlic, ginger, bay leaf, sea tangle, red pepper, radish, and onion, and boiling the mixture to obtain eel stock; adding liquor into the stock for removing the fishy smell of the eel; inserting seasonings into the eel stock, and boiling; and freeze-drying or spray-drying the eel stock to obtain the soup powder. 본 발명은 장어를 주성분으로 하는 장어 분말 스프의 제조방법을 제공한다. 본 발명의 방법에 의해 제조된 장어 분말 스프는 장어의 고유한 성분인 저칼로리 고단백의 좋은 특징을 그대로 갖으면서, 스프화되어 있으므로 누구나 쉽게 육수를 낼 수 있는 것을 특징으로 한다.
