PROBLEM TO BE SOLVED: To provide a production method of inulin cream superior in sensuality, to provide the inulin cream obtained by the production method, and to provide food, drink and animal feeding stuff which contain the inulin cream.SOLUTION: There is provided a production method of inulin cream including: a) a step of mixing milk, fat-free milk, butter milk, buffalo milk, goat milk or sheep milk, or soybean whey, soybean milk, tofu whey or soybean paste with inulin powder under heating, and stirring； or b) a step of mixing milk, fat-free milk, butter milk, buffalo milk, goat milk or sheep milk, or soybean whey, soybean milk, tofu whey or soybean paste with inulin water solution under heating, and stirring.
