Disclosed are a layer-by-layer self-assembly of solidified linseed oil, a lipid complex thereof, and a preparation method therefor. The method comprises the following steps: (1) dispersing an oil in an aqueous sodium alginate solution, then performing shearing or homogenization to obtain an oil-sodium alginate microcapsule (2) adding the oil-sodium alginate microcapsule into an aqueous calcium lactate solution, then stirring to obtain a solidified oil-sodium alginate gel bead (3) adding then stirring the solidified oil-sodium alginate gel bead in an aqueous chitosan solution, an aqueous sodium alginate solution, and an aqueous calcium lactate solution in that order, and obtaining a solidified oil-sodium alginate gel particle with a self-assembled layer and (4) repeating Step (3) on the solidified oil-sodium alginate gel bead with the self-assembled layer to achieve layer-by-layer self-assembly and solidification of the oil.
