The utility model disclosed the process of producing purple sweet potato candy as a nutritious and cheaper confectionery for human consumption. The process of producing purple sweet potato candy comprises the following steps: preparing the ingredients such as purple sweet potato flour, potable water, evaporated milk, condensed milk and butter mixing the purple sweet potato flour with water and allowing the mixture to rehydrate for 30 minutes adding and mixing the evaporated and condensed milk to the rehydrated purple sweet flour cooking the mixture in a pan greased with butter under medium fire with constant stirring for 15 minutes or until thick consistency is attained allowing the cooked mixture to cool at room temperature and slicing the cooled candy to desired size and shape.
