PROBLEM TO BE SOLVED: To provide a method of hydroponic cultivation for fruits and vegetables in which the content of specific constituents is adjusted to be low while regulating the adverse effect on taste.SOLUTION: The method of hydroponic cultivation for fruits and vegetables grows fruits and vegetables by causing the fruits and vegetables to absorb components included in a culture medium. The cultivation period is such that the fruits and vegetables are cultivated until a first fruit derived from a first flower cluster and a second fruit derived from a second flower cluster of the fruits and vegetables. The cultivation period is divided into a first time period from the start of hydroponic cultivation of the fruits and vegetables to the flowering of the first flower cluster and a second time period from the flowering of the first flower cluster of the fruits and vegetables to the bearing of the first and second fruit. The first and second time periods are configured of a plurality of divided time periods of preset timings with the start point as a reference. When predetermined components to be absorbed into the fruits and vegetables which are included in the culture medium are target components, the start time of each of the divided time periods is set as a trigger, and the culture medium with a fixed amount of the target components is given to the fruits and vegetables at the divided time periods.
