PROBLEM TO BE SOLVED: To provide a method for producing good-tasting cucumbers boiled down in soy sauce which have a crispy texture.SOLUTION: A method for producing cucumbers boiled down in soy sauce includes: a cutting step of cutting a cucumber into round slices a salt-rubbing step of rubbing cucumbers with salt a boiling step of boiling the cucumbers with a prescribed boiling soup and a cooling step of rapidly cooling a whole pot of the cucumbers with iced water.
