The present invention is to manufacture diet food lowering the entire calories and increasing the nutrients and immunity based on the nutritional grounds and expected analysis. Recently, reckless meals and intake of high calorie food of contemporary people are direct or indirect causes of lifestyle related diseases such as diabetes, obesity, constipation, atherosclerosis, hypertension, etc. The present invention provides functional instant cooked rice helping in diet and the diabetes, and comprises 85-95 weight% of mixed cereals of naked barley, unpolished rice, kelp unpolished rice, tetrastichum, black rice, black glutinous rice, pressed barley, split barely, black bean, red bean, black soybean, soybean, Rhynchosia volubilis, brown soybean, peeled mung bean, big soybean, green soybean, kidney bean and adlay; and 5-15 weight% of additive powder of yacon powder, barley sprout powder, Salicornia herbacea powder, and acorn powder. The functional instant cooked rice according to the present invention is manufactured by washing the mixed cereals, adding the additive powder, cooking rice and packaging the cooked rice at a fixed package unit. The functional instant cooked rice contains various nutrients including carbohydrate, protein, mineral and vitamin whereas the calorie is low, which improves health of a user with a balanced nutrition supply, and enables to help in improvement of physical constitution and prevention of lifestyle related diseases, especially to be useful in diet and to remarkably contribute to alleviation of the diabetes.
