<;P>;PROBLEM TO BE SOLVED: To provide a method for dispersing/stabilizing essential oil which does not necessarily comprise using fruit juice, causes no precipitation of pulpy substance and also enables excellent perfume: to provide a method for producing a beverage utilizing the method for dispersing/stabilizing essential oil: and to provide a beverage produced by the method for producing the beverage. <;P>;SOLUTION: The method for dispersing/stabilizing essential oil comprises dissolving an essential oil in &ge;80% alcohol water solution followed by mixing the mixture solution with water-soluble polysaccharides and/or an emulsifier, making the water-soluble polysaccharides and/or the emulsifier adsorb the essential oil components to disperse and stabilize the essential oil in a beverage.
