GYUHI (TURKISH DELIGHT)-LIKE FOOD PRODUCT CONTAINING STARCH, ISOMALTULOSE, AND TREHALULOSE, AND METHOD FOR PRODUCING THE TURKISH DELIGHT-LIKE FOOD PRODUCT
PROBLEM TO BE SOLVED: To provide a Gyuhi (Turkish delight)-like food product with improved quality, and a method for producing the same.SOLUTION: Provided is a Gyuhi-like food product containing starch, isomaltulose, and trehalulose. The food product contains, relative to 100 pts.mass thereof, 15 to 25 pts.mass of isomaltulose and 1.5 to 10 pts.mass of trehalulose. Also provided is a method for producing a Gyuhi-like food product by kneading starch, isomaltulose, trehalulose, and water while heating or after heating. In the method, relative to 100 pts.mass of the starch, amounts of isomaltulose and trehalulose are 50 to 90 pts.mass and 5 to 35 pts.mass, respectively.SELECTED DRAWING: None
