The present invention relates to a manufacturing method of a biopolymer microcapsule, comprising the steps of: (a) preparing a protein solution and a dietary fiber solution, respectively; (b) forming a first emulsion in a water-in-oil type (O/W) by adding and homogenizing a nuclear material into the protein solution of the step (a); (c) adding the dietary fiber solution of the step (a) into the first emulsion in the water-in-oil type (O/W) of the step (b), and then homogenizing the mixture at a stirring speed of 50 to 160 rpm for 10 to 100 seconds to form an emulsion in oil-water-in-water type(O/W/W); and (d) adding a coagulant into the emulsion in the O/W/W type manufactured in the step (c) and gelating the mixture. Provided is a microcapsule which is manufactured with low costs and simple process by using a biopolymer which is divided into two phases in the process of manufacturing the biopolymer microcapsule of the present invention. In addition, the biopolymer microcapsule manufactured by the manufacturing method of the present invention forms the emulsion in oil-water-in-water type(O/W/W), reduces bad smell and bad flavor of the nuclear material, thereby reducing an uncomfortableness, when eating, and has oxidation stability and storage property. Also, since a natural polymer has an antibacterial characteristic, an antioxidant characteristic, a dietary fiber, etc., the present invention can be utilized not only as a functional food, but also in pharmaceutical and cosmetic industries.본 발명은(a) 단백질 및 식이섬유질의 용액을 각각 준비하는 단계; (b) 상기 (a)단계의 단백질 용액에 핵물질을 첨가한 후 균질화하여 유중수적형(O/W)형태의 1차 에멀젼을 형성하는 단계; (c) 상기 (b)단계의 유중수적형(O/W)형태의 1차 에멀젼에 상기 (a)단계의 식이섬유질 용액을 첨가한 후 50 내지 160 rpm의 교반속도로 10 내지 100 초 동안 균질화하여 유중수중수적형(O/W/W)형태의 에멀젼을 형성하는 단계; 및 (d) 상기 (c)단계에서 제조한 O/W/W형태의 에멀젼에 응고제를 첨가하여 겔화시키는 단계;를 포함하는 바이오폴리머 마이크로캡슐의 제조방법에 관한 것이다. 본 발명의 바이오폴리머 마이크로캡슐을 제조하는 단계 중에 두 개의 상으로 분리되는 바이오폴리머를 이용하여 제조비용이 저렴하고, 공정이 간단한 마이크로캡슐을 제공한다. 또한, 본 발명의 제조방법으로 제조된 바이오폴리머 마이크로캡슐은 oil-water-in-water(O/W
