PROBLEM TO BE SOLVED: To provide peptide-containing food and drink intended for reducing bitter taste and astringency.
SOLUTION: The peptide-containing food and drink is added with oligosaccharide bonded with at least 3 monosaccharides. As for oligosaccharide, galactosyl-sucralose, galactosyl-lactose, xylotriose, kestose, raffinose, gentitriose, stachyose, gentiotetraose, cyclodextrin, and maltosyltrehalose can be used. The addition of oligosaccahride can reduce bitter taste and astringency through giving almost no influence to sweet taste and acid taste of the peptide-containing food and drink.
