The present invention relates to a method for producing a sugar extract by using persimmon. According to the present invention, persimmon peel or persimmon without merchantability which are generated during a persimmon jelly manufacturing process is reused. Sugar is extracted from the materials. Accordingly, environmental pollution and report of civil complaint caused by disposal of waste are prevented. High quality sugar is extracted and merchandised. Remaining persimmon peel or persimmon without merchantability can be reused for fertilizer or compost. According to the present invention, persimmon peel, generated during a persimmon processing procedure, or persimmon without merchantability, generated during a harvesting procedure, is collected, put into a freezing chamber before the same becomes soft, and is quickly frozen and stored. Frozen and stored materials in an amount for extracting sugar are taken out and thawed. The materials are washed. Water is removed from the materials. Extract liquid containing sugar is obtained by crushing the thawed persimmon peel or persimmon without merchantability and compressing the same with an extractor. Sugar extract liquid is obtained by filtering and then boiling the extract liquid. As persimmon peel from which sugar ingredients have been extracted or persimmon without merchantability contains a portion of sugar, is mostly composed of fiber, and thus is reused for fertilizer or compost.COPYRIGHT KIPO 2017본 발명은 곶감제조과정에서 발생하는 감껍질이나 상품성이 없는 감을 재활용하되, 상기 재료들로부터 당을 추출토록 함으로서, 폐기처분에 따른 환경오염 및 민원발생을 예방할 뿐 아니라, 양질의 당을 추출하여 상품화하고, 잔류하는 감껍질이나 상품성이 없는 감은 사료용이나 퇴비로 재활용토록 한 것이다.상기 과제를 해결하기 위한 수단으로서, 본 발명은 감 가공과정에서 발생한 감껍질이나, 수확과정에서 발생하는 상품성이 없는 감을 수거하여 연화되기 전에 냉동고에 투입, 급속냉동보관하고, 냉동보관된 상태에서 당추출을 하고자 하는 량의 재료를 끄집어 내어 해동, 세척한 다음, 물기를 제거하고, 해동된 감껍질이나 상품성이 없는 감을 파쇄한 다음 착즙기로 압착하여 당을 함유한 추출액을 얻고, 상기 추출액을 여과한 다음 끓여 당추출액을 얻고, 당성분이 추출된 감껍질이나, 상품성이 없는 감은 당을 일부 포함하되, 대부분이 섬유질이기 때문에 사료용이나 퇴비용으로 재활용한다.
