PROBLEM TO BE SOLVED: To provide a method for producing a fused confectionery having totally new appearance and texture not have been obtained heretofore.SOLUTION: Provided is a method for producing a confectionery in which a danish substrate and a shoe substrate are combined where a danish substrate is arranged, along the side face of a firing die, in such a manner that the face of the substrate layer and the side face of the sintering die are made parallel, at this time, the conditions where, regarding the bottom face of the firing die, arrangement is performed in such a manner that the face of the substrate of the danish substrate and the bottom face are made parallel, but, the substrate is not arranged at the central part of the bottom face of the firing die are made, thereafter, a shoe substrate is drawn at the central part, and subsequently, firing is performed. According to this invention, the shoe substrate and the danish substrate can be simultaneously subjected to suitable firing, and a fused confectionery having totally new appearance and texture not have been obtained heretofore can be produced.SELECTED DRAWING: Figure 3COPYRIGHT: (C)2017,JPO&INPIT【課題】従来にない全く新規な外観・食感を有する融合菓子を製造する方法を提供することを課題とした【解決手段】 本発明は、デニッシュ生地を、焼成型の側面に沿って、生地層面と焼成型側面が平行になるように配置し、当該焼成型の底面も、デニッシュ生地の生地層面と底面が平行になるように配置するが、焼成型底面の中央部は生地を配置しない状態にした後、当該中央部にシュー生地を絞り、その後焼成するデニッシュ生地とシュー生地を組み合わせた菓子の製造法である。本発明によれば、シュー生地及びデニッシュ生地が同時に適度な焼成ができ、従来にない全く新規な外観・食感を有する融合菓子を製造することができる。【選択図】図3
