The present invention relates to a method for manufacturing functional internal organs and, more specifically, to a method for manufacturing functional internal organs having improved pathological functions and to functional internal organs manufactured by the method. The method for manufacturing functional internal organs comprises the following steps: mixing 10 to 40 parts by weight of chitosan per 100 parts by weight of water and obtaining a mixture； concentrating the total volume of the mixture to 60 to 80% and obtaining a concentrate； mixing the concentrate and the internal organs at a weight ratio of 2 : 1 or 1 : 2, and heating the same； and aging the internal organs at the temperature of 30 to 50C.본 발명은 기능성 내장류의 제조방법에 관한 것으로, 보다 상세하게는 물 100 중량부 당 키토산 10 내지 40 중량부를 혼합하여 혼합물을 획득하는 단계, 상기 혼합물의 총 부피를 60 내지 80%까지 농축시켜 농축액을 획득하는 단계, 상기 농축액과 내장류를 2:1 내지 1:2의 중량 비율로 혼합한 후 가열하는 단계 및 30 내지 50℃의 온도에서 내장류를 숙성시키는 단계를 포함하는 기능성 내장류의 제조방법； 및 상기 본 발명의 기능성 내장류의 제조방법에 의해 제조된 기능성 내장류에 관한 것이다.
