A liquid smoke ink and a method of making the smoke ink is provided. Thesmoke ink may be applied to a substrate and dried. The substrate may be usedas a food,primarily a meat, casing. Liquid smoke is made from a dehydrated liquid smoke,whichis a solid smoke. The solid smoke is dissolved in a food grade solvent tocreate thesmoke ink. The smoke ink is applied to a substrate wherein the solventevaporates. Thisleaves the smoke flavor on the substrate in an, essentially, fixed position.
