A method of preparing a food, comprises:- 1 (a) treating smoke to selectively remove one or more PAHs that contain 4 or more benzene rings therefrom, and (b) contacting the treated smoke of (a) with a food, or 2 (a) providing a smoked food, wherein the food is a solvent or solution acceptable in the food industry, and (b) treating the smoked food to selectively remove one or more PAHs that contain 4 or more benzene rings therefrom by contacting the smoked food with a filter in solution, to yield a smoked food for human consumption with reduced PAH content. Filtering is selective to remove PAHs that contain 4 or more benzene rings compared with removal of naphthalene and/or phenanthrene. Food for human consumption can be smoked using the treated smoke. Apparatus including filters are provided.
