The present invention relates to an enzyme product with anti-oxidation and whitening effect and a manufacturing method thereof, in which black fungus, black bean, and red date are used as raw material and sugar and water are added to the raw material for forming the enzyme ingredients, which are then subjected to fermentation with at least one fermentation strain of probiotics, so as to form an enzyme product with excellent anti-oxidation-DPPH free radical removal rate, whitening effect (tyrosinase inhibition), and anti-oxidation (total flavonoid).本發明之具抗氧化力及美白功效之酵素產物及其製造方法,主要係以黑木耳、黑豆、紅棗做為原料,並加入糖及水成為酵素成分,再與包括至少一種益生菌的發酵菌種,經發酵反應,而形成一種具有良好抗氧化力-DPPH自由基清除率、美白功效-酪胺酸酶抑制率以及抗氧化-總類黃酮的酵素產物。1‧‧‧黑木耳2‧‧‧黑豆3‧‧‧紅棗4‧‧‧糖5‧‧‧水6‧‧‧發酵菌種
