PROBLEM TO BE SOLVED: To provide a novel remaining bitterness reducing agent of water soluble pea polysaccharide, and iso α acid-containing beverage whose bitterness and astringency remaining in aftertaste are suppressed and flavor is improved by using the same.SOLUTION: There is provided a remaining bitterness reducing agent of an iso α acid-containing beverage containing water soluble pea polysaccharide as an active ingredient. There is provided a remaining bitterness reducing agent, in which average molecular weight of the water soluble pea polysaccharide is preferably 100,000 to 1,000,000. There is provided an iso α-acid-containing beverage containing no malt extract nor wort and the water soluble pea polysaccharide of 0.03 w/v%, preferably 0.03 w/v% or more. There is provided an iso α-acid-containing beverage further preferably having bitterness value (BU)/water soluble pea polysaccharide (w/v%) of 433 or less.SELECTED DRAWING: Figure 1COPYRIGHT: (C)2019,JPO&INPIT【課題】水溶性エンドウ多糖類の新規な用途としての苦残低減剤、及びそれを用いて、後味に残る苦味と渋みを抑え、香味の改善した、イソα酸含有飲料の提供。【解決手段】水溶性エンドウ多糖類を有効成分とする、イソα酸含有飲料の苦残低減剤。前記水溶性エンドウ多糖類の平均分子量が、10万~100万であることが好ましい苦残低減剤。麦芽抽出物及び麦汁を含有しないイソα酸含有飲料であって、水溶性エンドウ多糖類を0.03w/v%以上、好ましくは0.03w/v%以上含有するイソα酸含有飲料。苦味価(BU)/水溶性エンドウ多糖類(w/v%)が433以下であることが更に好ましいイソα酸含有飲料。【選択図】図1
