PROBLEM TO BE SOLVED: To provide marine product pickles having textures and flavors near to those of raw marine products without applying a positive fermentation treatment, and to provide a method for producing the same.SOLUTION: Marine product pickles are produced by a method including the steps of: a dry fillet shavings-obtaining process having the steps of pickling fish fillets in a seasoning solution, dry-smoking the obtained seasoning solution-pickled fillets, and shaving the obtained dry fillets a process for obtaining cut heat-dried sea algae having the steps of finely cutting sea alga materials, spraying an alcohol-containing liquid on the obtained cut sea algae, and heating the obtained alcohol-treated cut sea algae in hot water a process for obtaining seasoning solution-pickled roes having the step of pickling the roe in a seasoning solution a first mixing process for stirring a seasoning solution while adding the dry fillet shavings and the cut heated sea algae therein a second mixing process for adding red pepper and stirring the solution, and a third mixing process for adding the seasoning solution-pickled roe and stirring the solution.COPYRIGHT: (C)2014,JPO&INPIT【課題】積極的な発酵処理を施すことなく、生に近い食感、風味を持つと言える海産物漬物及びその製造方法を提供する。【解決手段】魚肉フィレを調味液に浸漬する工程と、得られた調味液浸漬処理フィレを乾燥燻煙する工程と、得られた乾燥フィレを削り処理する工程とを有し、乾燥フィレ削片を得る工程と、海藻材料を細切りする工程と、得られた刻み海藻にアルコール含有液を噴霧する工程と、得られたアルコール処理刻み海藻を熱湯中で加熱する工程とを有し、刻み加熱海藻を得る工程と、魚卵を調味液に浸漬する工程を有し調味液漬け魚卵を得る工程と、調味液に前記乾燥フィレ削片と刻み加熱海藻とを加えながら攪拌する第1混合工程と、南蛮を加えて攪拌する第2混合工程と、前記調味液漬け魚卵を加えて攪拌する第3混合工程と、を含んで成る製造方法により海産物漬物を製造する。【選択図】なし
