To provide a processed food product mainly formed of a pickle of smoked Japanese radish which achieves a texture with uniform chewy.SOLUTION: The processing method of a processed food product comprises: a step for separating a skin part from a pickle of smoked Japanese radish for obtaining a pickle which has no skin; a step for desalinating the pickle which has no skin with water for obtaining a desalinated pickle; a step for performing seasoning impregnation processing of the desalinated pickle; a step for drying the pickle subjected to the seasoning impregnation processing. There is also provided the processed food product which is a dry matter of the pickle of the smoked Japanese radish whose skin part is separated therefrom, and is seasoned by the seasoning liquid.【課題】均質な歯応えのある食感が得られるいぶり大根の漬物を主原料とする加工食品を提供する。【解決手段】いぶり大根の漬物から皮部分を分離して皮無漬物を得る工程と、前記皮無漬物を塩抜きし塩抜き漬物を得る工程と、前記塩抜き漬物を調味料含浸処理する工程と、前記調味料含浸処理した漬物を乾燥させる工程と、を含む加工食品の加工方法、および皮部分が分離されたいぶり大根の漬物の乾燥物であって、調味液で味付けされたことを特徴とする加工食品である。
