PROBLEM TO BE SOLVED: To provide a fresh fish meat processed food having both water-soluble deliciousness and oil-soluble deliciousness close to those of real chopped fatty tuna, as a fresh fish meat processed food enabling industrial mass production, and suppressed in flavor deterioration during distribution.SOLUTION: Fish-derived component-containing vegetable oil and fat for a fresh fish meat processed food is fish-derived component-containing vegetable oil and fat as an extract of an aqueous extract of fish by vegetable oil and fat. A fresh fish meat processed food presenting flavor like that of real chopped fatty tuna can be obtained by adding the fish-derived component-containing vegetable oil and fat to red-colored fish meat of tuna so as to make water-soluble deliciousness included in red-colored fish meat, and oil-soluble deliciousness included in the fish-derived component-containing vegetable oil and fat act together.SELECTED DRAWING: NoneCOPYRIGHT: (C)2018,JPO&INPIT【課題】本発明の課題は、工業的に大量生産が可能で、流通時の風味劣化が抑制された生鮮魚肉加工食品であって、本物のネギトロに近い水溶性の旨みと油溶性の旨みの両方を有する生鮮魚肉加工食品を提供することにある。【解決手段】上記課題を解決する手段は、植物油脂による魚の水性エキスの抽出物である魚由来成分含有植物油脂であって、生鮮魚肉加工食品用の魚由来成分含有植物油脂を提供する。この魚由来成分含有植物油脂をマグロの赤身に添加すると、赤身に含まれる水溶性の旨みと、魚由来成分含有植物油脂に含まれる油溶性の旨みが相乗的に作用し、本物のネギトロのような風味を呈する生鮮魚肉加工食品を得ることができる。【選択図】なし
