PROBLEM TO BE SOLVED: To develop and provide a dried granular spicy seasoning with excellent taste which can be used not only for the Japanese cooking but also for Western cooking and Chinese cooking, and its producing method.SOLUTION: In a dried granular spicy seasoning and its producing method, a plurality of dried spicy seasonings, vegetables ground in a predetermined particle size or smaller, yeast extract dried seasoning, sugar giving sweet taste and salt are added to get a mixture, which is bound by taking as a core substance a bonding promoting material such as starch and employing water as a binding medium and which has a composite taste and a constant particle size situated at an intermediate between granule and powder.COPYRIGHT: (C)2013,JPO&INPIT【課題】和食料理はもちろん、西洋料理、中華料理にも使用でき、味の優れた乾燥細粒状の香辛調味料およびその製造方法を開発・提供する。【解決手段】乾燥した複数の乾燥香辛料、所定の粒度以下に粉砕する野菜を酵母抽出エキス乾燥調味料、甘みを付与する糖質、食塩を加え、混合物とし、これら混合物に、澱粉等の結着促進物質を中心物質にし、水を結着媒体として、前記混合物を結着させ、顆粒と粉末の中間に位置する一定の粒度と複合味を有することを特徴とする乾燥細粒状の香辛調味料及び製造方法から構成される。【選択図】 図1
