PROBLEM TO BE SOLVED: To provide a high shear conching method excellent in washability and easily corresponding to small lot multiproduct production by solving washability of a conventional conching apparatus in manufacturing oily confectionery dough, and a conching apparatus.SOLUTION: Oily confectionery dough is subjected to conching by using a planetary mixer which has stirring blades as frame type flat plate twisted blades, and achieves the planetary movement of the three stirring blades of a diameter D communicated with a drive shaft by making the rotation direction of revolution and autorotation reverse with each other in a stirring vessel (tank) so as to stir and knead a treatment material.SELECTED DRAWING: Figure 1COPYRIGHT: (C)2016,JPO&INPIT【課題】油性菓子生地の製造において、従来のコンチング装置の洗浄性の問題を解決し、洗浄性良好で小ロット多品種生産に対応が容易な高シアコンチング方法及びコンチング装置を提供する。【解決手段】駆動軸に連絡する直径Dの撹拌翼の3本を撹拌槽(タンク)内で公転、自転の回転方向を逆方向にして遊星運動させ処理材料を撹拌、混練するようにしたプラネタリーミキサーにおいて、該撹拌翼が枠型平板ねじれ翼であるプラネタリーミキサーを用いて油性菓子生地をコンチングする。【選択図】図1
