The present invention relates to food industry, particularly to microbiology and biotechnology of fermented milk products, and may be applied to production of starter (dedo) for matsoni, wholesome and innocuous Georgian fermented milk product. The applied method for producing and storage of starter for a yogurt-like fermented milk product matsoni, implies an inclusion of a symbiotic combination of at least two kinds y of bacteria, Lactobacillus delbrueckii subsp. lactis and Streptococcus thermofilus in its composition, inoculation and incubation of them in milk medium, wherein the amounts of their cells are taken within the ratio 1/ (2÷4). The symbiotic bacterial culture of Lactobacillus delbrueckii subsp. lactis and Streptococcus thermofilus is stored in lyophilic form until being inoculated in milk for processing matsoni.La présente invention concerne lindustrie alimentaire en général et la microbiologie et la biotechnologie de produits laitiers fermentés en particulier, et peut être appliquée à la production dune culture (dedo) de matsoni, produit laitier fermenté Géorgien sain et sans danger. Le procédé appliqué à la production et au stockage dune culture pour produit laitier fermenté de type yaourt matsoni consiste à inclure une combinaison symbiotique dau moins deux types de bactérie, la sous-espèce lactis de Lactobacillus delbrueckii et Streptococcus thermophilus dans sa composition à les inoculer et incuber dans un milieu laitier, les quantités de leurs cellules étant prélevées dans le rapport de 1/(2÷4). La culture bactérienne symbiotique de la sous-espèce lactis Lactobacillus delbrueckii et de Streptococcus thermophilus est stockée sous forme lyophile jusquà son incubation dans du lait pour préparer le matsoni.
