PROBLEM TO BE SOLVED: To provide baked and steamed confectionery having jam flavor by changing texture by adding a baking step to steamed confectionery made by steaming steamed confectionery dough, not known well as a texture improvement method of steamed confectionery.SOLUTION: Baked and steamed confectionery is formed by squeezing paste dough made by kneading jam, sugar and fat with the surface of steamed confectionery made by steaming steamed confectionery dough, and passing the product through a baking step. Furthermore, the baked and steamed confectionery is so formed that the steamed confectionery dough contains the jam, and the jam contained in the paste dough and the jam contained in the steamed confectionery dough are different kinds of jam.SELECTED DRAWING: Figure 1COPYRIGHT: (C)2016,JPO&INPIT【課題】蒸し菓子の食感改良ではあまり知られていない蒸し菓子生地を蒸してなる蒸し菓子に焼成工程を加え食感を変化させ、餡の風味を有する焼成蒸し菓子を提供する。【解決手段】上記課題を解決するため、蒸し菓子生地を蒸してなる蒸し菓子の表面に餡と糖と油脂を混練してなるペースト生地を絞りその後、焼成工程を経てなることを特徴とする焼成蒸し菓子の構成とした。また蒸し菓子生地にも前記餡を含むことを特徴とする焼成蒸し菓子の構成とした。さらには前記ペースト生地に含まれる餡と前記蒸し菓子生地に含まれる餡が異なる種類の餡であることを特徴とする焼成蒸し菓子の構成とした。【選択図】図1
