PROBLEM TO BE SOLVED: To produce a glutinous rice cracker having a soft texture (without undergoing a cooling process) by simple equipment.SOLUTION: A method for producing glutinous rice cracker includes: a rice cake dough A production process of adding and mixing an emulsifier to and with rice cake dough obtained by steam-kneading glutinous rice in the range from 1.0 to 1.5% by weight of raw material rice a shaping process of drawing the rice cake dough A into a sheet shape by a draw roller 1, transferring the sheet-shaped rice cake dough B, and die-cutting it by a cutting roller 3 and processes of drying the die-cut shaped rice cake dough C in the usual manner and baking it. In the shaping step, the rotating surface speed of the draw roller 1 is made higher than the transfer speed (the speed of a conveyor 2) during the die cutting to supply the sheet-shaped rice cake dough B to a die-cutting position.
