PROBLEM TO BE SOLVED: To provide blended flour for bread having drastically favorable bakery quality and containing alkali-treated rice powder and freeze-dried gluten, and to provide rice powder bread having good quality and obtained by using the same flour.SOLUTION: The flour blended with rice powder, extremely excellent in bakery quality compared with that of conventional rice powder/flour blended with gluten, is prepared by blending an appropriate amount of freeze-dried gluten to alkali-treated rice powder having drastically favorable bakery quality. The rice powder bread having dramatically high quality compared with that of conventional one is produced by using the flour blended with rice powder.
