PROBLEM TO BE SOLVED: To provide alkali-treated rice flour blended flour which has extremely superior adequacy to produce confectionery, and to provide quality confectionery using the same.SOLUTION: The adequate amount of alkali-treated rice flour blended flour with extremely superior adequacy to produce confectionery is blended with soft wheat flour with 6-10.5 mass% protein content. Accordingly, the rice flour blended flour with extremely superior adequacy to produce confectionery to the conventional rice flour blended flour is prepared. The confectionery containing rice flour with much higher quality than a conventional product can be produced using the rice flour blended flour. The confectionery obtained with the method is better than the conventional product in total quality, and has excellent characteristics, especially, in texture (stickiness) and flavor.
