PROBLEM TO BE SOLVED: To provide a method capable of producing rice-form snack cereal having a texture different from that of puffed cereal, and a method capable of easily producing molded snack cereal in which rice grains are shown.SOLUTION: Provided is a method for producing rice-form snack cereal comprising: a stirring step of adding hot water to rice powder and performing stirring to obtain a substrate; a rice grain molding step of cutting the one obtained by working the substrate with a vacuum extrusion molding machine into a prescribed shape to obtain a rice grain-shaped molded body; and a fry step of frying the rice grain-shaped molded body with oil. The method further comprises: a mixing step of mixing a plurality of rice grain-shaped molded bodies after the frying step with a binder solution including maltodextrin having a dextrose equivalent of 10 to 18 and oxidized starch at a mass ratio of 50 to 99:50 to 1 of the maltodextrin: the oxidized starch to obtain a mixture; a molded body working step of working the mixture into a molded body having a prescribed shape; and a drying step of drying the molded body having a prescribed shape.【課題】ポン菓子とは異なる食感の米形スナック菓子が製造できる方法と、米粒が見える成形スナック菓子を簡単に製造できる方法を提供する。【解決手段】この発明の米形スナック菓子の製造方法は、米粉にお湯を加えて攪拌することにより生地を得る攪拌工程と、生地を真空押し出し成形機で所定形状に加工したものを切断することにより、米粒状の成形体を得る米粒成形工程と、米粒状の成形体を油で揚げるフライ工程と、を有する。フライ工程後の複数個の米粒状の成形体と、デキストロース当量が10以上18以下のマルトデキストリンと酸化澱粉を、質量比でマルトデキストリン:酸化澱粉=50~99:50~1の割合で含有する結着剤溶液と、を混合して混合物を得る混合工程と、混合物を所定形状の成形体に加工にする成形体加工工程と、所定形状の成形体を乾燥する乾燥工程と、を有する方法で成形スナック菓子を製造する。【選択図】図1
