PROBLEM TO BE SOLVED: To provide a method for creating a rice-bran paste while eliminating the need for troublesome work for a rice-bran paste that needs to be mixed every day, eliminating the need to touch a rice-bran paste to keep hands from the peculiar odor of a rice-bran paste, and making improvement to prevent infiltration and growth of bacteria.SOLUTION: A dried rice-bran paste 1 is packed in a stock bag 2 made of SOILON (R) or paper to eliminate the need to directly touch bran for cleanliness. Since the rice-bran paste does not make contact with ingredients such as vegetables, processing is easy. When the ingredients put on a saucer, covered with a wrap film from above and kept in a refrigerator for a week are eaten, it is proved that they can be kept long, with their taste and color not changed from a week ago.COPYRIGHT: (C)2012,JPO&INPIT【課題】毎日、混ぜなくてはならないぬか床の面倒な作業を無くすこと。ぬか床に触れることで、独特のぬか床の臭いが手についてしまう。又、雑菌などの進入、増殖などそれを改善するぬか床をつくるための方法を提供する。【解決手段】乾燥したぬか床1を、ソイロン製又は紙製ダシ袋2に詰めることによって、直接ぬかに触れなくてよく、清潔である。野菜などの材料にもぬか床がつかないので、処理が簡単である。【効果】皿に盛り付け、上からラップフィルムをして、冷蔵庫で一週間保管し、試食してみたが、味も色も一週間前と変わらず、日持ちすることが証明された。【選択図】図1
