Provided is a composition in which a food can be present stably and which has various use properties so as to be able to be used in various use applications. A composition containing microparticulate complexes of a food, the composition being characterized in that: (a) the largest particle diameter before an ultrasonic treatment is larger than 100 [mu]m; (b) when the ultrasonic treatment is carried out, the largest particle diameter after the treatment decreases by 10% or more compared with that before the treatment; (c) when the ultrasonic treatment is carried out, the mode diameter after the treatment is 0.3 to 200 [mu]m inclusive; and (d) when 10000 microparticles and/or microparticulate complexes in the composition before the ultrasonic treatment are analyzed with a particle form image analysis device, the 10th percentile value of a numerical value N of the microparticles and/or the microparticulate complexes, which is determined in accordance with the calculation formula shown below, is 0.40 or less: N = ((degree of unevenness)*(degree of circularity)) / (aspect ratio).本發明提供一種具有可使食品於組合物中穩定地存在、且可用於多種用途之各種利用特性之組合物。 本發明之含有食品微粒子複合體之組合物之特徵在於: (a)超音波處理前之最大粒徑大於100 μm; (b)於進行超音波處理之情形時,於該處理之前後,最大粒徑降低10%以上; (c)於進行超音波處理之情形時,該處理後之眾數徑為0.3 μm以上且200 μm以下; (d)於藉由粒子形狀圖像解析裝置對10000個超音波處理前之組合物中之微粒子及/或微粒子複合體進行分析之情形時,對於各微粒子及/或微粒子複合體藉由下述計算式求出之數值N之第10百分位數值為0.40以下, N=(凹凸度×圓形度)÷縱橫比。
