Provided is a composition in which a food can be present stably and which has various use properties so as to be able to be used in various use applications. A composition containing microparticulate complexes of a food, the composition being characterized in that: (a) the largest particle diameter before an ultrasonic treatment is larger than 100 µm； (b) when the ultrasonic treatment is carried out, the largest particle diameter after the treatment decreases by 10% or more compared with that before the treatment； (c) when the ultrasonic treatment is carried out, the mode diameter after the treatment is 0.3 to 200 µm inclusive； and (d) when 10000 microparticles and/or microparticulate complexes in the composition before the ultrasonic treatment are analyzed with a particle form image analysis device, the 10th percentile value of a numerical value N of the microparticles and/or the microparticulate complexes, which is determined in accordance with the calculation formula shown below, is 0.40 or less: N = ((degree of unevenness)×(degree of circularity)) ÷ (aspect ratio).
