Provided is a composition in which a food can be present stably and which has various use properties so as to be able to be used in various use applications. A composition containing microparticulate complexes of a food, the composition being characterized in that: (a) the largest particle diameter before an ultrasonic treatment is larger than 100 µm; (b) when the ultrasonic treatment is carried out, the largest particle diameter after the treatment decreases by 10% or more compared with that before the treatment; (c) when the ultrasonic treatment is carried out, the mode diameter after the treatment is 0.3 to 200 µm inclusive; and (d) when 10000 microparticles and/or microparticulate complexes in the composition before the ultrasonic treatment are analyzed with a particle form image analysis device, the 10th percentile value of a numerical value N of the microparticles and/or the microparticulate complexes, which is determined in accordance with the calculation formula shown below, is 0.40 or less: N = ((degree of unevenness)×(degree of circularity)) ÷ (aspect ratio).
