The invention relates to technology of pectin production from vegetable materials, in particular to an effective method of isolating sun flower pectin and can be used in producing products of prophylactic and medical purpose and also in food and pharmaceutical industries. The invention is aimed at reducing contact time of vegetable material with acidic solutions in the process of pretreatment thereof and hydrolysis thereof in producing pectin from sun flower, reducing medium acidity, increasing production yield and improving the quality of the final product. A method of processing sun flower into pectin comprises grinding thereof, pretreatment by sodium salt solution, hydrolysis-extraction of a solid phase in a dynamic regime of hydrochloric acid (pH 1.6±5.5) with hydromodulus 1:20 and short-time contact of a pectin solution (5-10 min.) with heating to 85-120°C, gravity separation of a liquid phase, centrifugation, ultrafiltration concentration and deposition by ethanol. There provided a process scheme of continuous extractors for pretreatment of raw material and its hydrolysis by a dynamic method: salt (1) or acid (2) solution is pumped into extraction columns (4, 5, 6) where pectin substances (7) are released and the extract proceeds to further treatment (8). The solution flow rate is regulated according to columns parameters that is depending on their length and diameter so that the contact time of the isolated product not exceeding 10-30 minutes in case of using common columns. It is more preferable to use streamline extractors in a commercial process since they provide to easily extract pectins by fractions. The invention permits to increase production yield and improve the quality of final product (molecular mass, amount of galacturonic acid and rate of etherification) and also safe economic costs in pectin production due to low reagents cost used in pretreatment of raw materials.Изобретение относится к технологии производства пектина из растительного сырья, а
