PROBLEM TO BE SOLVED: To provide a new food material or a pet food material excellent in palatability and health functionality using amino acid as raw material, and an attractive food product or pet food using thereof.SOLUTION: A food material or a pet food material excellent in palatability and health functionality is a material obtainable by adding a reducing sugar to an amino acid and subjecting the resulting mixture to a heat treatment, and the material contains a Maillard reaction product generated by the heat treatment.
