The purpose of the present invention is to provide a method for manufacturing a soybean beverage and a soybean curd which have sufficient health functional components by including a soybean curd residue and a hypocotyl, included in soybean, i.e., a material, and which provides a decent flavor and taste without a presumption of using a grinder or a special apparatus, known as a high-pressure homogenizer and through a simple equipment configuration, at low power consumption, at a low cost and in a short time. The present invention comprises: a hypocotyl powder preparation step of drying a raw soybean and eliminating a husk and extracting a hypocotyl and heat treating the hypocotyl and performing air stream grinding of the hypocotyl at a temperature of 55°;C or less and thereby, grinding the hypocotyl to fine particles such that the hypocotyl having a median diameter (d50) of 20 to 40 μm and a particle diameter of 100 μm or less accounts for 90 % or more in ratio; a soybean powder preparation step of performing an air stream grinding of a soybean, which is removed of a hypocotyl, at a temperature of 55°;C or less and grinding a soybean to fine particles such that the soybeans having a median diameter (d50) of 20 to 40 μm and a particle diameter of 100 μm or less accounts for 90 % or more in ratio; and a raw material combination step of mixing 0. 05~2 wt% of the hypocotyl powder and 2 to 22 wt% of the soybean powder to manufacture a whole soybean beverage.(과제) 본 발명은, 「원료가 되는 대두에 포함되는 비지 및 배축을 통째로 함유시킴으로써 건강기능성 성분을 풍부하게 포함하고, 풍미도 식감도 양호한 두유류 음료 및 두부」를, 그라인더나 고압 호모지나이저라는 특수한 기기의 사용을 전제로 하지 않고 간이한 설비구성에 의하여, 저동력 또한 저비용이고 또한 단시간에 제조하는 기술을 제공하는 것이다.(해결수단) 생대두를 건조시킨 후에 탈피처리하여 배축을 추출하고, 상기 배축을 가열처리한 후에 상기 배축을 55℃ 이하에서 기류분쇄하여, 메디언 지름(d50)이 20∼40μm이고 또한 입경이 100μm 이하인 비율이 90% 이상이 되도록 미세하게 분쇄하는 배축분말 준비공정과, 상기 배축을 추출한 대두를 55℃ 이하에서 기류분쇄하여 메디언 지름(d50)이 20∼40μm이고 또한 입경이 100μm 이하인 비율이
