PROBLEM TO BE SOLVED: To provide a tempered chocolate having soft mouth melting and an oil and fat composition suitable for manufacturing the same.SOLUTION: There is provided an oil and fat composition satisfying following conditions (a) to (e). (a) the content of HOH is 40 to 70 mass%. (b) the content of POP is 25 to 55 mass%. (c) the content of SOS is 1.5 to 5 mass%. (d) the content of POS is 3 to 15 mass%. (e) the content of liquid TG is 30 to 60 mass%. HOH: triglyceride having oleic acid bound to 2 position and saturated aliphatic acid having 16 or more carbon atoms bound to 1 and 3 positions. POP: 1,3-dipalmitoyl-2-oleoyl glycerin. SOS:1,3-distearoyl-2-oleoyl glycerine. POS: triglyceride having an oleoyl group at 2 position and each one of a palmitoyl group and a stearoyl group at 1 and 3 positions.
