The present invention relates to a vegetable peeling apparatus which comprises the following: a base; a chain belt conveyor which includes a transfer belt formed on one surface, and is installed on the upper side of the base; a pressing belt conveyor which is formed with an elastic sponge belt, and is installed on the upper side of the transfer belt of the chain belt conveyor; and an upper and lower side compressed air spraying member which is located in between the transfer belt of the chain belt conveyor and the sponge belt of the pressing belt conveyor, and discharges compressed air toward the stem of spring onion in the constant pneumatic pressure. In the peeling apparatus, the upper and lower side compressed air spraying member comprises: an upper and lower side compressed air spraying member body which is installed on the upper side of the chain belt conveyor and the inside of the chain belt conveyor; an upper and lower side windbreak guide plate which is installed inside the upper and lower side compressed air spraying member in a stairs form; and an upper and lower side air nozzle operation member which is installed inside the upper and lower side compressed air spraying member, with the tip end of an upper and lower air nozzle continuously moving to the left and right sides.
