The present invention consists of a method for determining the moment in which the coffee mucilage fermentation stage ends, based on changes in coffee density during the recently depulped and washing phases, taking advantage of the mass compacting in the process which produces the washed coffee bean mass. Likewise, a simple, low-cost and easy to use device is disclosed, in order to objectively and reliably determine the endpoint of the coffee mucilage fermentation process. The shape of the device in one of its preferred embodiments is a right truncated cone, having perforations that allow the outflow of fluids and the retention of beans.La présente invention concerne un procédé permettant de déterminer le moment où prend fin létape de fermentation du mucilage du café, en fonction des changements de densité du café pendant les phases de lavage et de dépulpage récent, ledit procédé profitant du compactage de masse au cours du processus qui produit la masse de grains de café lavés. Linvention concerne aussi un dispositif simple, bon marché, et facile à utiliser, en vue de déterminer de façon objective et fiable le point final du processus de fermentation du mucilage du café. La forme du dispositif dans un des modes de réalisation préférés constitue un cône tronqué érigé qui a des perforations permettant aux liquides de sécouler et aux grains dêtre retenus.
