The cellulose complex in the present invention is the one comprising the cellulose, the anionic polysaccharide containing no chemical cross-linking structure, and water-absorbing particles containing the compound having chemical crosslinking structure, and is made to have the viscosity of above 10 mPa.S when 1 mass% of the cellulose complex is dispersed into the 0.45 g of sodium bicarbonate followed by dissolving together into 100 ml pure water to make the aqueous solution.本發明之課題在於提供一種即便於飲料中以高濃度調配有離子之情形時,纖維素複合體本身亦可穩定地分散且懸浮穩定性優異之纖維素複合體。本發明之纖維素複合體係包含纖維素、不具有化學交聯結構之陰離子性多糖類、及包含具有化學交聯結構之化合物之吸水性粒子者,並且使該纖維素複合體以1質量%分散至使碳酸氫鈉0.45g溶解於純水100ml而成之水溶液中時之黏度為10mPa‧s以上。
