PURPOSE: A manufacturing method of dried persimmon slices is provided to manufacture dried persimmon slices with various tastes and to maintain the slice form in the drying procedure of dried persimmon slices.CONSTITUTION: A manufacturing method of dried persimmon slices comprises a step of washing ripe raw persimmons a step of fumigating washed raw persimmons with sulfur a step of slicing persimmons to a desired thickness a step of coating edible powdery materials on the persimmon surface sliced with a fixed thickness a step of spreading the persimmon slices coated with powder on a net and covering a net so that the persimmon slices are dried between nets a step of adhering supplementary food materials on the persimmon slice surface a step of drying the liquid material used in a post processing step by drying post-processed persimmon slices with wind at a room temperature and a step of ageing naturally at 5-20deg.C for 3-10 days. In a preparation step, the tap and calyx are removed at once by cutting the top of persimmon, and the lower part of persimmon is cut evenly. In a molding step, persimmons are cut to mold with a knife having a particular shape such as a circular shape, a square shape, a star shape etc. In the drying step, the persimmons are dried at 5-35deg.C for 2-25 days. In the post processing step, after ripe persimmon liquid manufactured by pulverizing ripe persimmons is coated on the surface of the dried persimmon slice, another persimmon slice which is dried in a different condition from the persimmon slices coated with ripe persimmon liquid is adhered to the persimmon slice coated with ripe persimmon liquid. In the post processing step, after ripe persimmon liquid manufactured by pulverizing ripe persimmons is coated on the surface of the dried persimmon slice, supplementary food materials other than persimmon are adhered.
