PROBLEM TO BE SOLVED: To provide an oil-and-fat composition which may be used for an emulsified composition having excellent emulsion stability and enabling a high-quality bakery product to be baked by being kneaded to dough.SOLUTION: The bakery oil-and-fat composition contains 1-60 mass% of monoacylglycerol and 5-60 mass% of diacylglycerol, wherein the ratio of unsaturation monoacylglycerol included in the monoacylglycerol is 0.045-0.5 in a mass ratio based on the gross weight 1 of the monoacylglycerol.
