PROBLEM TO BE SOLVED: To provide a manufacturing method of fried food products made from ingredients including crustacea, shellfish, or mollusca pretreated with a pretreating agent for fried food products, which prevents the ingredients from being excessively hardened when fried, and decreases the reduction in elasticity and juiciness of the ingredients after frying.SOLUTION: The manufacturing method of fried food products made from ingredients including crustacea, shellfish, or mollusca to which a pretreating agent for fried food products made from ingredients including crustacea, shellfish, or mollusca is attached. The pretreating agent includes one selected from the group consisting of the following (A), (B), (C), and (D): (A) an emulsified composition having high oil content (B) a sol composition including 5.0 pts.mass or less of pregelatinized starch relative to 100 pts.mass of the emulsified composition having high oil content (C) a sol composition including 1.0 pt.mass or less of thickening polysaccharides relative to 100 pts.mass of the emulsified composition having high oil content and (D) a sol composition including 5.0 pts.mass or less of pregelatinized starch and 1.0 pt.mass or less of thickening polysaccharides relative to 100 pts.mass of the emulsified composition having high oil content.
